Cafe Au Lait Green Monster

I have found the perfect combination of two of my favorite things- green monster smoothies and fun coffee drinks…the Cafe au Lait Green Monster.



If you are not familiar with green monster smoothies, they are a great tasting combination of fruits, veggies, milk, yogurt and sometimes peanut butter! The whole premise is you can get a decent amount of spinach or kale or any other green veggie of your choice and you dont even taste it! How great would it be to get your kids to drink an entire cup of spinach and they are none the wiser : )
Combine this with some a cup of Brew Over Ice French Vanilla Kcup coffee and you end up with a wonderfully delicious, decadent coffee drink. Starbucks aint got nothin on you!
Here is the secret recipe:

Café au Lait Green Monster
  • 1 C Kcup coffee, I prefer using a French Vanilla Brew Over Ice but, pick simply pick your favorite Kcup, brew it in a cup of ice and you are good to go!
  • 2 large handfuls baby spinach or Kale
  • 3-4 ice cubes
  • 1 really ripe banana, frozen
  • 1 t vanilla extract
  • 1/3 C milk
Combine ingredients in your blender in this order: coffee, vanilla, spinach, ice, bananas.
Blend until nice and smooth. Pour into your favorite HUGE mug or cup- I love using the double walled insulated iced coffee type of cup so I can sip with a straw. Add ice cubes if you so desire. But wait there’s more–pour the milk over the top and mix in. You could just toss the milk in the blender with the other ingredients, but then it wouldn’t swirl with the green foam on top and look extra pretty.
There we have it, the worlds first healthy indulgent coffee drink!

White Chocolate Mocha made with you Keurig Brewer!

The people have spoken and they gave me a challenge. I made the declaration that you CAN make any fancy, schmancy coffee-house drinks in your own home using your Keurig brewer and you said – “oh ya what about a White Chocolate Mocha?!” take that (ok so I added that part). I honestly had no idea how to do this, it is not a drink I have made before but, I made the declaration and gosh darn it, I am sticking to it. So, yes you can make a White Chocolate Mocha in your Keurig Kcup brewer and here is how…

Make any coffee house drink in your own home with your Keurig Kcup brewer!There are three basic ingredients in a White Chocolate Mocha.

1-White chocolate. Whether it be actual white chocolate, a flavored syrup or a white chocolate hot cocoa.

2-Coffee. Lets talk about the coffee for a second. Any sort of cafe type drink uses a stronger brewed, possibly dark roast coffee. If you don’t go bold with your coffee, it will be completely watered down by the milk and other ingredients, so be brave! Espresso is the most common but, there are several K- Cup varieties that will work. I generally use the Green Mountain Dark Magic Extra Bold, it seems to give just the right kick to make these delicious beverages taste perfect! Oh and whichever K-Cup you choose, brew it on the lowest water setting your brewer allows. Again, you want to actually taste the coffee so it has to be STRONG! The best part is, when using the Keurig it is completely customizable. If you prefer decaf then use a decaf K-Cup. Flavored- sure, use a flavored K-Cup. Keurig is all about making it YOUR drink so choose what is right for you.

3-Milk. Go for the gusto people, this is a treat- use whole milk. If you absolutely can not bring yourself to do that at least use 1 or 2%. Coconut or soy milk is fine for those who are vegan or can’t handle dairy (the vanilla flavored would be a nice touch). I would recommend staying away from almond the flavor is a bit too strong for me and I think it skews the taste of the drink (I do have a few smoothie recipes that are perfect with almond milk that I will be posting soon)- if you happen to love that taste then go for it, this is your indulgence!

I have three recipes for you. Easy, easier and easiest! I have to be honest and let you know that I only tried two of them but, I am quite sure the third will be great too.

First- easiest. This is sooo quick and sooo tasty! You will need two K-Cups, brew a Timothy’s White Chocolate Hot Cocoa K-Cup in a very large mug with your Keurig brewer on the lowest water setting. Next brew your favorite extra bold K-Cup (any variety will do but, I would choose a dark roast) again, on the lowest water setting. Top with whipped cream and white chocolate shavings- wahla… you have a white chocolate mocha made in your own home in minutes and for a fraction of the cost you would spend at a certain coffee shop who shall remain nameless but, it rhymes with blartucks.

Second, easier. This is the one I did not try but, I am quite sure it will be great. If you try it, let me know how it turns out! You will need one extra bold K-Cup, milk and Fotana White Chocolate Mocha Sauce (I chose this brand because all of the reviews I read were great). Heat a little less than half a mug of milk in the microwave or on the stove top. If you are lucky enough to have a milk steamer that is even better. Brew your extra bold K-cup directly into your mug of milk. Add the White Chocolate Mocha sauce to your taste. Stir and enjoy!

Third easy (and my favorite!). You will need one extra bold K-cup, milk and white chocolate chips (preferably Ghiradelli). Using a double boiler heat about 1/3 cup of milk and about 2 tablespoons of white chocolate chips. Once your water comes to a boil, reduce the heat and let simmer, stirring occasionally until smooth. Pour the mixture into your favorite large mug and brew your extra bold K-Cup directly into the mug, as always using the lowest water setting. You definitely need to live it up and top this one with whipped cream and maybe a dash of cinnamon! Try multiplying this recipe, putting it in a crock pot and serve it at your next get together! I loved this drink and am glad to add it to my reputoire! Next time I make it I may add a bit of vanilla to the mixture as well.

Its BREW OVER ICE time! I am in love with iced coffee and was so happy when I realized I can make it easily with my Keurig! Three words... BACON. MAPLE. LATTE.

Made in your kitchen with your Keurig Kcup brewer!

I feel no introduction is needed here. We need to get to the recipe as quickly as possible!

There are two variations. The first is so easy.

1. Brew your favorite Kcup coffee in your Keurig coffee brewer. I would suggest a darker roast such as Tullys House Blend or French Roast brewed on the lowest water setting of your Keurig.

2. Place a piece of cooked bacon in your coffee and let it sit for 5 minutes.

3. Froth or steam your milk. You can simply heat about ½ – 1 cup of milk in the microwave or stovetop if you do not have a frother.

4. Pour the milk onto the coffee.

5. If you are lucky enough to have a milk frother you can now crumble the bacon on top of the milk! I really think this make the drink. I have a super cheapo $10 frother that works just fine.

The second variation is the same as above for the most part except, instead of putting the bacon in the coffee you would use bacon fat. (I know, I know but, you only need a teaspoon- how bad for you can that be? And it’s a Bacon Maple Latte; did you really expect it to be healthy?)

Here is how to handle the bacon fat:

1. Cook up the bacon. Save the fat – this is the part you really need. Make sure you cook the bacon slowly, so all the fat cooks out, then strain the drippings through cheesecloth or a very small strainer so that it is clear. You can store this fat in a covered container in the fridge. You can cook with it or use it for your coffee, just keep in mind that it doesn’t keep forever. You’re going to want to use it in a timely fashion.

3. Add anywhere from a teaspoon to a tablespoon of bacon fat to your coffee, depending on your tastes. Remember, it’s a flavoring – you don’t need much.

The novel part of the drink is…bacon fat. Not bacon essence, bacon flavoring or bacon #40, just plain ol’ bacon fat. You’ll find that it separates from the coffee; just stir it again if you want.

I am soooo excited about this recipe!!! I think it would go quite well with this donut…
